Leftover Ham Casserole
4 large baking potato
3 tbs butter or margarine
3 tbs flour
1 cup milk
1/4 tsp salt
1/4 tsp pepper
1/4 cup dry white wine
1 lb cooked ham, sliced
1 large onion, sliced
1 cup shredded monterey jack cheese
How
to cook:
-
Peel potatoes & slice very thinly.
Pat dry with paper towels & set aside.

Melt butter in a small heavy saucepan.
Remove from heat & whisk in flour. Gradually whisk in milk & seasonings, return to heat and stir constantly until thickened, about 10 minutes.
Remove from heat and add the wine. Set aside.

Assemble in layers in the bottom of a lightly greased ovenproof casserole dish- 1/2 of the ham, 1/2 of the potatoes, 1/2 the onions, 1/2 the sauce and 1/2 the cheese.
Repeat the layers.

Cover & bake in a preheated 350°F oven for an hour.

Remove cover & continue baking for another 15 minutes

Ham Loaf Recipe

750 gr ground baked ham
500 gr ground fresh pork
1 tbs spicy brown mustard or prepared mustard
1 onion - chopped fine
1 large clove garlic - minced or chopped fine
1/2 cup quick cooking oatmeal - uncooked
1/2 cup milk
3 eggs- slightly beaten
1 tbs dried parsley flakes
1/3 cup brown sugar
1/3 cup cider vinegar
How
to cook:

Heat oven to 350° F.

In food processor, pulse chunks of ham until it reaches desired consistency.

In a large bowl combine, ham, fresh pork, mustard, onion, garlic, oatmeal, milk, eggs, and parsley. Form into two loaves in prepared baking dish.

In a small bowl combine glaze.
Pour glaze over ham loaves and bake uncovered 60-70 minutes.
Baste 1 to 2 times during baking.

Serve warm with glaze.
Potato Pancakes with Ham
5 medium potatoes, boiled and mashed
1 1/4 cups lukewarm water
1 tbs rapid rise yeast
1 1/2 cups plain flour
vegetable oil for frying
6 slices of ham
12 dollops sour cream
salt and pepper
3 green onions, chopped for garnish
How
to cook:

Place mashed potatoes, yeast and flour in a large bowl.
Pour in water and mix well. Leave to rise in a warm place for approximately 30 mintues. The dough will double in size.

Heat a non-stick fry pan and add 1 tablespoon of oil to it.
Drop spoonfuls of the dough onto the preheated pan. They should be approximately 2-3 inches in diameter.

Cook potato pancakes over medium heat for 3-5 minutes or until light golden brown on the underside.
Turn with a spatural and cook on the second side for approximately 1 minutes.

Season with salt and pepper and transfer to a platter.
Top with a small dollop of sour cream and 1/2 slace of ham that is rolled up.

Garnish with a grind of pepper and sprinkle of green onion.
Ham and Cheese Bake Recipe
8 ounces chopped ham
1 large onion, minced
4 ounces canned mushrooms, drained
1/2 tsp salt, or to taste
2 cups shredded mozzarella cheese
16 ounces frozen broccoli
1 1/2 cups reduced fat baking mix
3 cups milk
6 eggs
2 ounces pimentos, chopped (optional)
How
to cook:

Preheat oven to 350°F.

Place onions and mushroons in a skillet and sauté on medium heat.
Coat baking dish with vegetable spray.

Layer ham, onions, broccoli, pimentos, and cheese in the bottom of prepared baking dish.

Combine eggs, milk, and baking mix until smooth. Pour over top of ham mixture.

Bake for 50 to 60 minutes or until middle is set. The baking dish or casserole may need to be covered with foil for the last 15 minutes, if it is beginning to brown more than desired.

Serve warm or cold.
Honey Baked Ham with Cloves
1 cup honey
1/3 cup butter
3 tbs dark corn syrup
3/4 tsp dry mustard (high quality)
2 tbs orange juice
1/4 cup whole cloves
1 ham of choice
How
to cook:
-
Score ham with a sharp knife in a diagonal pattern. Repeat scoring, diagonally, in the opposite direction to create a crossing pattern. Insert whole cloves at the crossings.

Preheat oven to 325° F.

Place ham in roasting pan fat side up; the melting fat will baste your ham. Turn ham over half way through baking to avoid uneven salting from the brine in the meat. If roasting a ham that is not precooked, bake for approximately 20-30 minutes per pound. If the ham is precooked, follow the label directions for cooking times.

While ham is roasting, combine all ingredients in a small sauce pan. Cook over medium heat and bring to a full boil, stirring frequently. Reduce heat and cook one minute.

Remove ham from oven prior to the last 30 minutes of baking. Cover ham with glaze. Glaze ham every 10 minutes during last 30 minutes of baking.

Serve remaining glaze with ham.
Ham Salad Sandwiches Recipe
1 1/2 cups ground baked ham or turkey ham
1/4 cup onion, minced or chopped fine
1/4 cup sweet pickle relish
1 tbs dijon mustard
1/2 cup mayonnaise
How
to cook:
-
In a food processor or mini chopper grind ham to desired
consistency.
-
In a medium bowl combine all ingredients, place into a covered container to chill.
-
Serve on a split bun.
-
Garnish with lettuce, bread and butter pickles, and mayonnaise.
